Rooted in classical French techniques such as meticulous lamination and precise entremets, Verzênay layers Chef Arshiya's Indian heritage into offerings like Desi Velour (cardamom mousse, carrot-cashew halwa, saffron rice crispy) and Chicago Mix macarons, using flours from Meadowlark Organics, Central Milling, and Grands Moulins de Paris alongside couvertures from Cacao Barry and Guittard.
